In honor of today, which according to my Facebook news feed is National Pancake Day, I decided to bake some Cranberry & Blueberry Coffee cake. Not exactly pancakes but in place of all-purpose flour I decided to use pancake mix, that's sort of celebratory right? Not only that, it's gluten-free! Had I used an egg alternative I could have gone full force and made this a vegan delight as well, but hey, I like my eggs :) Enjoy!
Cranberry & Blueberry Coffee Cake
1 cup brown sugar
1 whole egg
2 egg whites
1 tsp vanilla
1/4 cinnamon
1/4 tsp salt
2 tsp baking powder
1/4 cup almond milk
2 cups Trader Joe's gluten-free pancake & waffle mix
3/4 cups frozen cranberries
1/3 cup blueberries
Place mixture in 8x8 pan and bake at 350ยบ for about 25-35 min or until fluffy and golden brown.
